Who doesn’t love a savoury muffin? These muffins from Lazy Day Brunches combine the rich, crumbly textures of feta cheese with the sweet, ripened flavour of sun-blush tomatoes. Enjoy for breakfast and brunch alongside other savoury accompaniments.
75 g butter, melted
2 eggs
140 ml whole milk
300 g self-raising flour
1 teaspoon baking powder
1 teaspoon salt
2–3 pinches of dried oregano
14 sun-blush tomatoes, chopped
100 g feta cheese, diced
a 12-hole muffin pan, lined with 10 muffin cases
Makes 10 muffins
Preheat the oven to 200°C (400°F) Gas 6.
Whisk or beat together the melted butter, eggs and milk in a large mixing bowl.
In a separate bowl, sift the flour and baking powder together, then stir in the salt and oregano. Pour in the melted butter mixture and quickly and lightly fold into the flour. Stir through the tomatoes and feta.
Divide the mixture evenly between the muffin cases and bake in the preheated oven for 20–25 minutes until risen and golden-brown. Serve the muffins warm from the oven or at room temperature.
