Fraises-des-bois Friands

Despite the torment Bridgerton’s Siena Rosso feels during her clandestine love affair with the conflicted Anthony, this dedicated diva still sings her (breaking) heart out to entertain and enchant her audience. Now you can eat your heart out in her honour with a devastatingly delicious Opera Tea, featuring these wild strawberry friands.

Fraises-des-bois Friands

 

70 g/½ cup ground almonds/almond meal

30 g/¼ cup plain/all-purpose flour

A pinch of salt

120 g icing/confectioners’ sugar

100 g/6½ tablespoons butter

3 egg whites

80 g/3 oz. fraises-des-bois or chopped fresh strawberries

6 friand moulds, lightly greaseds

MAKES 6

 

Preheat the oven to 180°C (350°F) Gas 4. 

Mix the almonds, flour, salt and sugar in a large bowl.

Melt the butter in a small saucepan, then remove from the heat and leave to cool. Whisk the egg whites until frothy and light (it’s not necessary to whip them into peaks as you would if making meringues).

Trickle the butter into the dry ingredients and add half the egg whites. Mix lightly, and then add the remaining egg whites and continue to mix until they are fully incorporated.

Spoon the mixture into the prepared moulds and scatter the fraises-des-bois over the top. Bake for about 15 minutes or so, until the friands are risen and golden and spring back when pressed lightly.

Serve warm or leave to cool completely.
