This lime marmalade from Lazy Day Brunches is easy to make as to eat.
6 small limes
3 unwaxed lemons
2 kg granulated white sugar
sterilised glass jars
Makes about 1.3 kg
Scrub the fruit, cut into quarters and remove the seeds. Fill a large pan with 3 litres of water and soak the fruit for 24 hours.
Remove the fruit from the pan (don’t discard the water) and cut into small shreds. Return to the water in which it has been soaking, bring to the boil and boil for 1 hour.
Add all the sugar to the pan. Boil again until the juice forms a jelly when tested. To test if the marmalade is ready, place 2 teaspoons of the mixture on a cold saucer. Press the surface of the marmalade with your thumb and if it wrinkles, it is done. Let cool for 10 minutes. Transfer the marmalade into sterilised jars and seal. Store in a dark, cool place and, for the best taste, leave to set for 1 month.
