This is a slight deviation of the classic Bellini, adding a little extra kick with the vodka and peach liqueur. Perfect for serving on a summer’s evening or before a dinner party to get the night’s proceedings off to a sophisticated start.
1 oz./25 ml vodka
1 oz./25 ml peach purée
2 teaspoons crème de pêche
Well-chilled Prosecco, to top up
2 dashes of peach bitters
Peach slices and a mint sprig, to garnish
Add the vodka, peach purée and crème de pêche to a cocktail shaker filled with ice cubes and shake to mix. Strain into a flute glass, top up with Prosecco and add two dashes of peach bitters. Garnish with fresh peach slices and a mint sprig and serve.
