These delicious muesli bars make the perfect morning or afternoon treat to share with friends and family, to pack for kids’ school snacks or sporting events, or for breakfasts on the go! Made with creamy peanut butter, cacao nibs, quick oats and maple syrup, this recipe is so simple and nutritious. No baking required! You could swap peanut butter for almond butter, if you like.
YOU'LL NEED:
200 g quick oats
140 g smooth peanut butter
80 ml maple syrup
60 g cacao nibs
brownie pan lined with parchment paper
MAKES 12 BARS
PREP TIME: 10 MINUTES
PLUS 1 HOUR CHILLING TIME
Combine all the ingredients together in a mixing bowl, making sure to coat the oats with peanut butter.
Spoon the mixture into the prepared brownie pan and press down the muesli mixture firmly and evenly with your fingers or a spatula.
Leave to set in the fridge for 1 hour.
Remove from the fridge and into cut bars before serving. Store in an airtight container in the fridge.
