Once you’ve tried this pitcher from Summer Drinks you’ll wonder why you haven’t been adding Prosecco to Pimm’s all your life! However it is best to keep in mind that it packs a little bit more of a punch than your regular Pimm’s and lemonade…
You will need
400 ml/1 3/4 cups Pimm’s No. 1
50 ml/1 2/3 oz. elderflower cordial
1 x 750-ml/25-oz. bottle Prosecco, chilled
Orange, lemon and cucumber slices, hulled strawberries and fresh mint sprigs, to garnish
Add the Pimm’s and elderflower cordial to a large jug/pitcher filled with ice cubes and stir gently to mix. Add the sliced fruit and strawberries and pour in the Prosecco.
Divide the mixture between 6 ice-filled highball glasses, sliding a little fruit into each one. Garnish each drink with a mint sprig and serve at once.
