Raspberry and Almond Tart

Raspberry and Almond Tart

This appealingly sticky, fruity tart from Cinnamon, Spice & Warm Apple Pie tastes better the day after it's made. Freezing the raspberries beforehand ensures that they keep their shape during baking and don't become too mushy.
Smoky Prawn and Chickpea Stew

Smoky Prawn and Chickpea Stew

This spicy stew is deliciously warming and comforting. Seasoned with Spanish sweet smoked paprika (pimentón dulce), the rich tomato sauce envelopes the juicy seafood and chickpeas in flavour. In Spain during winter store-cupboard staples like pulses are used alongside fresh seafood and this surf ‘n’ turf dish would be typical of dishes cooked on the southern coast. Just serve with chunks of good crusty bread for dunking.
Hokkein Noodles

Hokkein Noodles

The name ‘Hokkein noodles’ refers both to a type of noodle and a noodle dish. Originally from the Hokkein province in China, the noodles and the dish gained popularity in Malaysia and Singapore, and today are synonymous with stir-fried noodles around the world. An authentic Singaporean Hokkein mee is made with prawns rather than pork, but this was cooked for me by a friend who spent several years in Singapore, and it was delicious.
Fideua Tortilla

Fideua Tortilla

This recipe from La Paella is based on a classic Italian dish, frittata di maccheroni, adapted here to make a Spanish version of tortilla. It can be served as a light lunch or supper dish with alioli and salad, or cut into bite-size pieces and served with romesco sauce, as tapas.

Prince of Wales Tea with Apple and Cinnamon Scones

Prince of Wales Tea with Apple and Cinnamon Scones

These lovely apple and cinnamon scones from Tea and Cake make a very regal combination with Prince of Wales tea. This tea is a blend of black China tea originally created for Edward, Prince of Wales (the future King Edward VIII). In 1921, he granted Twinings permission to sell his personal blend using his royal title and they have done so ever since. It’s quite a mild tea with a strong aroma, and it makes a perfect cuppa.
