This recipe from Brontë Aurell’s Brontë at Home is based on a ‘Sockerkaka’ – a sugar cake, in Swedish. You can top it with anything, from berries to nuts, and flavour it with anything from cardamom to vanilla!
These traditional buns are always served on 13th December, when the arrival of Saint Lucia is celebrated, across Sweden, Norway and Denmark. The buns are baked in an ‘S’ shape, with two raisins, one in each curve.
Imagine the scene: a little red cottage by a lake that glimmers in the late summer sunlight. A table in the meadow, decorated with lanterns, bunting or little hats with crayfish on them. Welcome to the crayfish Party.
