Delicious Soda Bread

Delicious Soda Bread

Making bread can be a relaxing way to spend your time at home. Simple and economical to make, you can knock up this soda bread in less than an hour when you have unexpected guests, when you want some lovely warm bread with your meal, or when you have some milk that has gone sour in the fridge. Baked either freeform or in a baking pan, this bread is fantastic eaten plain on the day it was made (especially with a green salad tossed in a sharp dressing), great toasted on day two and ready for the birds by day three. It’s not a good keeper, but it always gets eaten really quickly!
Super Stout

Super Stout

Give your coffee a kick this St. Patrick's day with this cocktail recipe you can make right at home. You’d be forgiven for thinking this is a half pint of Ireland’s finest! It’s actually the result of my warped mind re-imagining an Irish coffee. I’m a huge fan of an ice-cold Guinness, and in this killer recipe, I’ve combined it with coffee and whiskey to transform it into a Super Stout. It’s bound to rub many a Guinness purist up the wrong way, but it's worth it for the delicious result. The Guinness replaces the use of cream to retain a velvety texture.

Veggie Halloumi Souvlaki With Harissa

Veggie Halloumi Souvlaki With Harissa

Here’s a delicious meat-free souvlaki for when you need one. The secret to cooking halloumi is, ironically, to treat it like a steak: bring it to room temperature before cooking, sear it under a high heat and stop cooking as soon as the outside has a nice crisp edge.
